In 1985 we opened Knuckles, a New York style sandwich shop / café in Kyoto. Dessert was my Mom’s N.Y. Cheesecake, faithfully duplicated by my wife Mieko (aka “The Real Boss”).
Our reputation for serving “The Real Thing” spread through the expat community and beyond and in 1990 we opened Papa Jon’s our first cheesecake specialty café also in Kyoto. Over the years we have added dozens of cheesecake flavors rotating them according to season and our baker’s whims. We also have a Cake of the Month Special.
